Spaghetti Carbonara On the Go

The busy executive is always on the run, a great meal usually means at an expensive restaurant, but nothing beats good old home style cooking especially when there is a friend (maybe of the opposite sex) to impress. The easy Spaghetti Carbonara recipe will not only please the special guest, it leaves ample time for the chef to spend some quality time, entertaining.


200g pancetta diced

500g spaghetti

2 cloves of garlic, crushed

3 eggs

100g Parmesan cheese, grated

100ml double cream

¼ cup parsley, chopped

1 tbsp extra virgin olive oil

salt and pepper, to taste


Cook the spaghetti as per the instructions in the pack.

Heat a thick based frying pan, add the pancetta, lower the heat and let the fat run.

When most of the fat has run out from the meat turn up the heat and add the garlic.

Cook till the pancetta becomes crispy and remove from fire.

In a large bowl, beat the eggs; add the pancetta and parmesan, season with salt and pepper.

Whisk till all the ingredients have blended well.

Drain the spaghetti.

Add the olive oil to a wok, add the spaghetti and slowly stir in the egg-pancetta mixture.

Keep tossing till the egg begins setting.

Stir in the cream and cook for 1 minute.

Add the parsley and serve immediately.
