My food philosophy is simple – Keep the food as uncomplicated as possible, cook fresh, retain the flavours and cook according to the season. Innovation persuades me to present food at its creative best. I believe that the possibilities of experimenting with the food are endless; however the biggest challenge for a chef remains bringing innovation to the authentic delicacies.
My favourite street food in Mumbai are Vada Pav and Bhaji Pav.
Indian food has taken a prominent position around the world, in the last eight to ten years, just
like Chinese cuisine. It has been adapted to suit the global palate after taming the local taste and flavours of spices and chillies.
In my free time I go on long bike trips, cook for my family and catch up on movies.
