Oriental and Italian cuisines.

A few of your signature dishes are:

Risotto with Foie Gras and Castlemango Cheese, Goat cheese Mezzelune with Truffle and Porcini Cream, and Herb-crusted Redsnapper with Tomato Risotto, Caper Berry and Green Peppercorn Sauce.

I like eating:

Homemade food, Sushi, Teppanyaki and Spaghetti Aglio Olio Pepperencino.

My most memorable moment as a chef has been:

Personally looking after Julia Roberts, her kids and her crew during the shooting of ‘Eat, Pray, Love’ in India. I also cooked for a very high profile Italian delegation and received a standing ovation.

In the kitchen, I am inspired by:

My passion and love for cooking, but guest requests challenge me as well.

The weirdest requests I have received from guests are:

Making Lasagne Bolognese without Bolognese, and Minestrone without vegetables.
